Chicken, Spinach, Cheese Quesadillas

Ingredients:

4 cups torn fresh spinach

1 cup shredded Monterey Jack cheese

½ cup shredded carrot

¼ cup chopped onion

2 6 oz cans shredded chicken

1 cup chopped tomato

1-2 tsp ground cumin

Tortillas

Directions:

Combine all ingredients, except tortillas, and mix well. In a large skillet, on medium heat, melt some butter to coat the pan, put one tortilla in the pan and spread some mixture into tortilla. Lay another tortilla on top. Press down on top tortilla, cover pan with a baking sheet to help hold in heat to melt the cheese. Cook 4-5 minutes. Flip tortilla over, cover and cook for another 4-5 minutes. Cut in wedges and top with salsa and sour cream if desired.
