Strawberry Spinach Salad

This salad is one of my favorites! It is like eating candy! The dressing, coconut, sugar coated almonds, and of course strawberries, make this such a sweet treat in the summer. 
Strawberry Spinach Salad

Time: 15 min prep, 5 min cook
Serves: 6-8

Ingredients:
2 bags baby spinach
1 lb. strawberries sliced into 4-ths
1 pkg. (8 oz.) finely shredded mozzarella cheese
1 C. finely shredded coconut
1/2 C. slivered almonds
1/3 C. sugar
1/8 tsp. salt

Dressing:
1/2 clove garlic
1/2 C. canola oil
1/3 C. sugar
1/8 tsp. salt
3-4 Lg. strawberries
1/3 C. red wine vinegar
1/4 tsp. paprika
1/8 tsp. pepper

Directions:
Blend dressing well in blender. Sugar the almonds by placing 1/2 cup almonds, 1/3 cup sugar, 1/8 teaspoon salt into a small pan. Mix together over medium heat. Stir constantly until almonds are toasted and sugar is caramelized. Remove from pan and let cool. Place spinach in large bowl. Sprinkle in cheese and coconut a little at a time with some dressing. Toss. Continue until all cheese, coconut and dressing have been used. Sprinkle in nuts and strawberries. Toss lightly. Serve immediately. If waiting to serve add dressing and nuts right before serving.
