Coca Cola Pork Sandwiches with BBQ Mayonnaise Sauce

Coca Cola Pork Sandwiches with BBQ Mayonnaise Sauce

Time: overnight marinate, 5-6 hours cooking
From: Michelle Craig

Ingredients:
Pork:
4-5 pounds pork butt

Marinade:
1 ½ cups brown sugar
4 cups coke

BBQ Mayonnaise Sauce:
2 cups mayonnaise
1 cup BBQ  (Bulls-Eye or KC Masterpiece)
1 tablespoon  Cholula hot sauce
1 tablespoon  Montreal seasoning  (or a little less)
12 Hogie Sized Buns

Mix coke and brown sugar together and pour over pork. (I put it all in a zip lock bag) Marinate in fridge (as much as 24 hours-at least 8 hours). Put pork in an oven safe pan or a crock-pot.  Make a new batch of marinade and pour over pork.  If cooking in oven: Cook at 350 degrees for about 1 hour then turn down to 250 degrees and cook for about 3-4 hours.  I usually cook it in my crock pot for about 5-6 hours. Shred pork when finished cooking. Butter each side of the buns on the inside and then put under broil on high until lightly brown.  Put BBQ Mayonnaise sauce on each side (a lot) and then add shredded pork.

Notes:
The best buns are the Kirkland brand sandwich buns that come in a 12 pack.
