Double Bean Burrito

I got this recipe from pinterest and added a few things to make it more what I think my family would like. I heard YUM's around the table. They were so yummy! I loved the added creaminess from the cream cheese. 



Double Creamy Bean Burrito

Serves: 6

Ingredients:
 6 Garden Spinach Wraps/Tortillas
1 tablespoon olive oil
1 small onion, chopped
1/2 red bell pepper, chopped
1 teaspoon minced garlic
1 (15 ounce) can black beans, rinsed and drained
1 teaspoon minced jalapeno peppers
3 ounces cream cheese
1/2 teaspoon salt
2 tablespoons chopped fresh cilantro
1 (15 ounce) can fat free refried beans
6 chicken tenders
1 tsp cumin
2 tsps chili powder
If desired: serve with sour cream, salsa, and avocado

Directions:
Preheat oven to 350 degrees F. 

Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
Cut cream cheese into cubes and add to skillet with salt and cumin. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.

Place chicken into a separate skillet and sprinkle with chili powder and a little salt on each side of the chicken tenders. Cook until juices are clear about 8-10 minutes on medium heat, turning chicken tenders over after 5 minutes. 

Lay out tortilla, spread a fair amount of refried beans down the center of the tortillas then layer with bean mixture and chicken. Wrap up into a burrito and place in a 9x13 inch baking dish. (Sprinkle with a little cheese if desired) Put in oven and bake for 15 minutes or until heated. Serve immediately.
