Mediterranean Wrap


Mediterranean Wrap

Serves: 6

Ingredients:
1 small box of roasted garlic and olive oil couscous, prepared as directed
3/4-1 cup chopped fresh parsley
1/4 cup lemon juice
3 tablespoons extra-virgin olive oil
2-3 teaspoons minced garlic
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 pound chicken tenders, cubed
1 medium tomato, chopped
1 cup chopped cucumber
Baby leaf spinach
1 medium avocado
Feta Cheese
6 10-inch spinach or sun-dried tomato wraps or tortillas


Directions:
Prepare couscous as according to box directions.

Meanwhile, combine parsley, lemon juice, oil, garlic, salt and pepper in a small bowl.

Toss chicken tenders in a medium bowl with 1-2 tablespoons of the parsley mixture. Place the tenders in a large nonstick skillet and cook over medium heat until cooked though, 5 to 8 minutes. 

Stir the remaining parsley mixture into the couscous along with tomato and cucumber.

To assemble wraps, layer some spinach leaves down the center of the wrap, spread about 1/2 cup of the couscous mixture onto each wrap. Divide the chicken among the wraps, top with a couple of slices of avocado per wrap, and sprinkle with desired amount of feta cheese on each wrap. Roll the wraps up like a burrito, tucking in the sides to hold the ingredients in. Serve cut in half.

Notes: Cut out the chicken for a vegetarian dish. You can also make this ahead of time. Some of the reviews say it is better the second day after the flavors have combined.
