Oatmeal Cookies
Judy's Recipe
Ingredients:
1 C Brown Sugar
1 C Granulated Sugar
1 C Vegetable Shortening
2 Eggs
2 tsp. Vanilla
2 T Milk
2 C All Purpose Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
2 C quick Oatmeal
Choc. Chips
Cherry Flavored Craisins (Can also use raisins, nuts etc.)
Directions:
Preheat oven to 350 degrees.
Grease cookies sheets. Beat shortening and sugars until creamy (or fluffy). Add eggs, vanilla and milk. Mix well. Combine flour, baking powder, baking soda and salt. Add to shortening mixture, mix well. Stir in oatmeal and whatever additions you choose. Spoon dough onto cookies sheet, about a rounded Tbs. each, about 2 inches apart. ( I do 3 rows of 4). I set my timer for 8 minutes and then check carefully until golden brown starts to show on the cookies. Remove from oven and let them stand on the sheet about 5 minutes. Remove to racks to cool. A batch generally makes 3 dozen cookies; sometimes maybe 4 to 6 more.
