Beef Fajitas


Beef Fajitas

Time: 2 hours marinating, 15 min prep, 10 min cook
Makes: approx 8-10 fajitas

Ingredients:
1 ½ pound beef sirloin steak, thinly sliced
½ cup zesty Italian dressing, divided
1 large green pepper, cut into thin strips
1 large red pepper, cut into thin strips
1 large onion, cut into thin strips
Flour tortillas, warmed

Toppings:
Cheese
Sour cream
Salsa
Guacamole
Mexican rice
Refried beans

Directions:
Combine steak and ¼ cup dressing in glass bowl; cover and refrigerate 2 hours to marinate, stirring occasionally. Remove steak and discard marinade.

Cook steak in remaining ¼ cup dressing in large skillet on medium-high heat for 5-6 minutes or until no longer pink. Keep warm.

Add peppers and onion; cook until tender. Add steak; cook until heated through. Serve in warm tortillas and top with desired toppings.
