Seafood Cajun Potato Salad
Time: 40 minute prep/cook, 1-2 hours fridge
Makes: 8-10 servings

Ingredients:
5 medium red potatoes, whole
6 cups water
3 Tablespoons seafood seasoning (Old Bay Seasoning)
1 Tablespoon salt
1 pound medium uncooked shrimp, leave shells on
1 cup green onions, diced
1 jar (2 ounces) pimentos, drained
1 Tablespoon Creole or Cajun seasoning (Tony Cheshire’s)
½ cup mayo, or a little more
1 teaspoon cider vinegar
½ tsp sugar
Salt and pepper to taste
Directions:
In a large pot boil potatoes in water with salt and seafood seasoning for 25 minutes. Add shrimp and reduce heat. Cover and cook for 5-10 minutes. Drain. Peel and dice potatoes. Peel and dice shrimp into pieces. Place potatoes and shrimp in large bowl. Add onions, pimentos, Cajun seasoning, mayonnaise, vinegar, sugar, and salt and pepper. Cover and refrigerate for at least an hour or overnight.
