Unfortunately I do not have a picture for this recipe and I almost didn't post this recipe because of that reason. But it is way too good and healthy to pass up and to not share this yummy recipe. So please try it! It is awesome.
Veggie Couscous
Serves: 6 people
Ingredients:
3/4 C. yellow squash, cubed
3/4 C. chopped zucchini
3/4 bunch of green onions with tops, chopped
1/2 C. chopped celery
1/2 C. chopped red bell pepper
1 T. minced garlic cloves
3 T. olive oil
1 can (14 oz.) garbanzo beans, drained
1/4 tsp. cayenne
3/4 tsp. cumin
1/2 tsp. curry powder
1/2 tsp. salt
1/2 tsp. garlic salt
1/4 tsp. pepper
1/2 tsp. parsley, dried
3 T. butter, melted
1 box about 3-5 C. cooked couscous
Directions:
Sauté over low heat, squash, zucchini, onions, celery, bell pepper, and garlic in oil until tender. Cook couscous while vegetables are cooking. Stir in beans and seasonings to vegetable mix and simmer to mix flavor for several minutes. Add couscous and stir to mix. Pour into sprayed baking dish. Drizzle butter over top. Bake at 350°F for 15 minutes. Top with green onions and parsley. Serve immediately.
