Angel Spaghetti Pie
This was a really simple meal and a fun twist on lasagna. I doubled the recipe and took it to friends for a meal. It was easy and yummy!
Time: 30 min prep, 30 min bake
Serves: makes 2 pies, about 8 people
From: Linda Curtis- Willow Creek Cookbook
Ingredients:
½ pound angel hair spaghetti
1 egg, beaten
1 pound ground beef
¾ medium onion, chopped
1 large jar of chunky spaghetti sauce
8 ounces cottage cheese
8 ounces sour cream
salt and pepper, to taste
1 – 1 ½ cups mozzarella cheese
Small can fried onions
Parsley
Directions:
Prepare angel hair pasta, cook and drain. Add the beaten egg and toss gently. Press pasta into 2 pie pans to form “shells”. Brown ground beef with chopped onion. Once cooked, mix in spaghetti sauce, let simmer on low. In a separate bowl, mix cottage cheese and sour cream together, with salt and pepper. In pie pans, layer meat sauce and cream mixture. Sprinkle lightly with fried onions, parsley and top with grated cheese. Bake 30 minutes at 350 degrees F.
