Colorful Chinese Chicken Salad


Colorful Chinese Chicken Salad

Serves: a large group!

Ingredients:
2 bags of Ready Made Coleslaw
2 medium tomatoes, chopped
1 red pepper, deseeded and chopped
1 yellow pepper, deseeded and chopped
Handful of Snow peas
2 large handfuls of baby spinach
½ - ¾ cup slivered almonds
2 packages oriental top ramen, uncooked
6-8 pieces of Teriyaki Chicken (from Costco, omit for vegetarian dish)
  
Dressing:
1 cup canola oil
½ c. red wine vinegar
1 c. sugar
1 tsp. salt
2 packages of oriental flavoring from top ramen packages

Directions:
Bring all ingredients for the dressing to a boil on the stove to disolve the sugar. Chill.

Toss all the vegetables, cole slaw, almonds in a bowl. Break up the top ramen noodles and add to salad. Pour dressing on right before you serve the salad to keep the salad from getting soggy. Or you can pour a little over individual portions.
