Ingredients:
2 lbs. red potatoes
4 slices bacon, sliced
1 small onion, thinly sliced
½ c. chicken stock or water
½ c. apple cider vinegar or red wine vinegar
2 tsp. sugar
1 tsp. paprika
1 tsp. dry mustard
salt and pepper to taste
Bring potatoes to a boil with enough water to cover.
Reduce heat and simmer uncovered under potatoes are tender when
pierced with a fork about 20-40 minutes depending on size.
Drain and peel if desired and cut into bite size pieces.
While potatoes are boiling, cook bacon in skillet until crisp.
Remove bacon to paper towel to drain. Cook onion in remaining fat over medium heat until golden
brown.
Add stock, vinegar,
sugar, paprika, mustard, salt and pepper and bring to a boil. Mix bacon with diced potatoes and pour
sauce over them. Gently mix to
coat and serve. The starch from the warm potatoes will thicken the sauce. Garnish with chopped parsley and/or chives.
