Swedish Yellow Pea Soup
Swedish Yellow Pea Soup

Serves: 6-8
Ingredients:
1 pound yellow swedish peas (or split peas)
1 ham hock
1 celeriac, peeled and cubed
3 medium potatoes, cubed
3 medium onions, chopped
3 leeks, chopped, white part or 6 green onions, chopped
3 large carrots, sliced
1 pound of canadian bacon in chunks
2 cans vienna sausage cut up
Directions:
Soak peas overnight and drain. Cook in 3 quarts of water on medium heat for an hour. Add ham and simmer for 1.5 hours. Add veggies and bacon and cook 30 minutes. Lift out ham and bacon. Debone and cut up. Add vienna sausages and heat 15 minutes. Serve with Swedish rye bread and pickled beets.
Notes:
Canadian bacon is so expensive. You can substitute 3 ham hocks. You can also use chopped celery (2-3 stalks) for celeriac. Can also be put in a slow cooker at once but save the vienna sausages for the end.
